Quest Cookies & Cream Cookie Cake Recipe

Ingredients

COOKIE & CREAM COOKIE CAKE

2 Quest Cookies & Cream Quest Bars ¼ cup almond milk 2 ½ cups almond flour ⅓ cup zero calorie sweetener ½ tsp baking soda ¼ tsp salt ⅓ cup melted butter 2 eggs 1 tbsp multi colored sprinkles

Frosting:

⅓ cup heavy cream ½ scoop Quest Vanilla Milkshake Protein Powder

Method

Preheat the oven to 350 F and prepare a 10-inch oven safe skillet with non-stick spray. Break the Quest Bars into small pieces and place them into a medium microwave safe bowl with the almond milk. Cook on high for 40 seconds. Stir until well blended and most of the bar is melted into the milk. Set aside to cool. Once cooled, whisk in the eggs and melted butter. In another bowl, stir together the almond flour, sweetener, baking soda and salt. Add the dry ingredients to the wet and use a rubber spatula to stir until a dough comes together. Press the dough evenly into the prepared skillet and top with sprinkles. Bake for 26-28 minutes and golden brown. Let cool. Whisk the heavy cream until stiff peaks form. Mix in the protein powder and then transfer to a piping bag with a star tip. Decorate cookie cake and top with sprinkles and crushed cookies if desired. Cut the cake into 14 slices and serve.
