Ingredients

SPICY PORK TENDERLOIN

2 bags crushed Quest Spicy Cheddar Cheese Crackers 1 tbsp fresh thyme, chopped 2 tbsp spicy dijon mustard 1 lbs pork tenderloin

Method

Preheat the oven to 400 F and place a cast iron skillet into the oven to preheat. Place the crushed crackers into a large shallow dish and stir in the fresh thyme. Coat the tenderloin in mustard and then roll in the crushed crackers until completely coated. Roast the tenderloin for 25-35 minutes and an internal temperature of 145 F in the thickest part of the pork. Let rest 10 minutes before cutting into 12 slices and serving.
