Questified Peppermint Brownies

Preheat the oven to 350 F and prepare an 8×8 inch pan with parchment paper. In a microwave safe bowl, melt the chocolate and butter together, let cool slightly. In another bowl, sift together the almond flour, sweetener, cocoa powder, protein, baking powder and salt. Place the eggs into a stand alone mixer or in a mixing bowl while using a hand held mixer, beat the eggs until fluffy, about 2 minutes. Add in the chocolate/egg mixture and vanilla. Mix until combined. Add in the dry ingredients and stir until the batter comes together and no spots remain. Transfer the mixture to the prepared pan and spread it out in an even layer. Bake the brownies for 16-18 minutes. Let cool completely before melting the white chocolate and topping with chopped Quest Peppermint Bar pieces.
