Ingredients

QUESTIFIED SUMMER SALAD

Ingredients:

2 cups arugula 1⁄2 cup basil, thinly sliced 1 avocado, chopped 1 cup cherry tomatoes, halved 1⁄2 cup fresh corn, about 1 ear of corn 1 english cucumber, chopped 1⁄4 cup goat cheese, crumbled 4 pieces of prosciutto, chopped 2 bags Quest Ranch Tortilla Chips

Dressing

3 tbsp red wine vinegar 1⁄4 cup olive oil Juice from 1⁄2 a lemon 1⁄2 tsp dijon mustard 1⁄2 tsp garlic powder 1⁄2 tsp dried oregano Salt and pepper to taste

Method

In a mixing bowl, add the arugula, basil, avocado, tomatoes, corn, cucumber, goat cheese and prosciutto. Whisk together the dressing ingredients and toss in the salad. Serve the salad with tortilla chips.
