These spice-rubbed grilled chicken thighs are an easy grilling recipe that will be on repeat this summer.


2 pounds boneless skinless chicken thighs 2 tablespoons paprika 2 teaspoons chili powder 2 teaspoons ground cumin 2 teaspoons dried oregano 1 1/2 teaspoons garlic salt A few grinds black pepper 2 tablespoons lemon juice 2 tablespoons olive oil, plus more for grill. 1 tablespoon honey 1/4 cup pitted green olives, chopped 2 lemons, thinly sliced Mint leaves and arugula, for garnish

In a medium serving bowl, stir together paprika, chili powder, cumin, oregano, garlic salt, and pepper. Add the chicken, then toss together to coat.  Heat the grill or grill pan to medium-high heat. Use a paper towel to coat the grill gates with olive oil to prevent sticking. Grill the chicken until lightly charred and cooked through, turning occasionally, about 12 – 15 minutes. Meanwhile, whisk together lemon juice, olive oil, and honey.  Place the chicken on a serving platter, top with the olives, lemon slices, arugula, and mint, then drizzle with the vinaigrette. Enjoy!
