Ingredients

LEMON POPPY SEED PANCAKES

1 cup almond flour 1 tsp baking powder ¼ tsp salt ½ scoop Quest Vanilla Milkshake Protein Powder 1 tbsp poppy seeds 1 Quest Lemon Bar, chopped ¼ cup almond milk 3 eggs 3 tbsp butter, melted Zest of 1 lemon

Method

In a large mixing bowl, combine the almond flour, baking powder, salt, protein powder and poppy seeds. In a microwave safe bowl, add the chopped Quest bar and almond milk. Microwave on high for 30 seconds and stir smooth (there will be a few bits that don’t melt) and then allow to cool for1-2 minutes. Whisk in the eggs, butter and zest. Add the wet ingredients to the dry and stir just until combined. Let the batter rest for 10 minutes. Heat a pancake griddle to 325 F or a skillet over low-medium heat. Spray with non-stick spray and cook the pancakes about 1/3 cup at time until golden brown, about 2-3 minutes on eachside. Serve warm with your favorite syrup.
