When the great minds in the Quest Test Kitchen said, “cupcakes.” We we were like, “what is this, 10 years ago?” Naturally we were then informed we’d be receiving exactly zero coconut almond cupcakes made with Quest Candy Bites. Then we begged. Then we cajoled. Then, and only then, did the Quest Blog receive the sustenance and protein we require to blog at these great heights. Protein, you say? In a cupcake? Leave it to the squares (we kid) in the Quest Test Kitchen (great people) to make cupcakes hip again.

Ingredients

QUESTIFIED COCONUT ALMOND CUPCAKES

Ingredients:

¾ cup almond flour ¼ cup zero calorie sweetener ½ scoop Quest Chocolate Milkshake Protein Powder 3 tbsp unsweetened cocoa powder ½ tsp baking soda ⅛ tsp salt 1 tsp almond extract 2 eggs, room temperature 1 tbsp coconut oil, melted ¼ cup almond milk 

Frosting:

1 cup ricotta cheese, low fat 1 scoop Quest Chocolate Milkshake protein powder 2 tbsp unsweetened cocoa powder 1 tbsp almond milkTopping: 1 Fudgey Brownie Candy Bite, chopped 2 tbsp shredded coconut

Method

Preheat the oven to 350 F and prepare a muffin pan with 6 liners. In a bowl, stir together the flour, sweetener, protein powder, cocoa powder, baking soda and salt. In another bowl, whisk together the eggs, coconut oil and almond milk until well combined. Add the dry ingredients to the wet and stir until a batter comes together. Distribute the batter between the 6 liners. Bake the cupcakes for 16-18 minutes and cooked through. Once the cupcakes have cooled, stir together all the frosting ingredients until well combined and smooth. Transfer to a piping bag and pipe onto cupcakes. Top with candy bite pieces and shredded coconut.
