Ingredients

HOT & SPICY ZUCCHINI FRIES

1 large zucchini 3 tbsp gluten free flour ½ tsp garlic powder ⅛ tsp salt 1 egg 3 tbsp Franks RedHot Sauce 1 bag Quest Hot and Spicy Protein Chips, blended ¼ cup grated parmesan cheese 1 tsp Italian seasoning

Method

Preheat the oven to 350 F and prepare a baking sheet with non-stick spray. Cut the zucchini into fries. Place the flour, garlic powder and salt into a bowl and combine. In another bowl whisk together the egg and hot sauce. In a third bowl, combine the blended chips, parmesan and Italian seasoning. Cover each zucchini piece in the flour mixture. Once they are all coated, dip each one in the egg mixture and then finally then coat in chips. Place them on the baking sheet and bake for 7 minutes. Cover with tin foil and continue to bake for another 3-5 minutes. Note: Do not use parchment paper or the fries can get soggy.
